What kind of DSLR camera + lens fits my speculations?

For under $500 most DSLRs will just about come up to your specs. Most of your ideas, such as vivid colour, can be altered in the camera's menu, or in software in the computer. You are right not to worry about megapixel count, even a 10MP camera would have more than you need. Start with the kit lens, but you may eventually want to get a 50mm or a 85mm for portraits.
